Easy Jam Tart recipe

Ingredients

  • 250g (2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 100g (½ cup) sugar
  • 1 egg and 1 yolk, beaten
  • 125g (8 tbsp, 1 stick + 1 tbsp, ½ cup) butter
  • 2 teaspoons grated lemon zest (optional)
  • 300g (1¼ cups) jam
  • A little powdered sugar for dusting

Instructions

  1. Place the flour, baking powder, and sugar in a food processor and pulse to mix.
  2. Add the egg, yolk, butter, and lemon zest (if using) and process until the mixture starts to form large clumps.
  3. Transfer two-thirds of the mixture to a lined 20cm (8-inch) square tin. Use your hands to press the mixture down evenly.
  4. Spoon the jam over the surface, spreading it out with a spatula.
  5. Crumble the remaining mixture over the jam.
  6. Bake in a preheated oven at 180°C (350°F) for 40-45 minutes until the top is lightly brown.
  7. Remove from the oven and let it cool in the tin. Then remove from the tin and cut into small squares.
  8. Sprinkle with powdered sugar.
